Biltong and Cheese Soup :
What you will need :
- 40 g DairyBelle Choice Salted Butter
- 8 Spring onions, chopped
- 50 ml Cake flour
- 250 ml Chicken stock
- 750 ml DairyBelle UHT Milk
- 200 g DairyBelle Easy Slice Cheddar
- 50 ml Medium cream sherry (optional)
- Salt and freshly ground black pepper to taste
- 60 g Biltong, shaved or chopped

How to Make it :
Heat the butter in a heavy-based saucepan. Add the onions and sauté until soft. Remove pan from heat, add the flour and mix through. Gradually add the stock and milk while stirring non-stop.
Return to stove and reduce heat to moderate. Stir mixture with a whisk until a smooth consistency. Add the cheese and keep stirring until cheese is melted and mixture is smooth. Stir in the sherry and remove from heat.
Season to taste. Add biltong to soup just before serving.
Serve warm with grissini or Italian bread.
